9 Grilling Tips

Well, you now have your shiny new grill sitting out on the patio, and you're looking forward to cooking some plump, juicy burgers or steaks. You want your food to turn out well, but grilling, like anything else, does take some practice. These grilling tips will help you to get a good start, and create a great meal.

Always be sure to oil your grill first. Either spray the grill with a nonstick cooking spray before you turn the grill on, or you can wipe it down with a wad of paper towels dipped in cooking oil. If the grill is hot, be sure to hold the paper towels in a pair of tongs. Proper lubrication will keep the meat from sticking to the grill. If it sticks, it will tear when you turn it, and it will lose its juices and become dry, as well as looking unattractive, so be sure to properly oil the grill.

Let the grill preheat before you put any food on it. You want the grill to be a constant temperature. If you put on the meat while the grill is still heating, you may end up with dry meat. If you are using charcoal, check the coals before you put the meat on the grill. The coals should be completely gray. This allows the temperature to level off, and the lighter fluid to burn away.

If you don't like the taste of lighter fluid on your food, try using a chimney starter. Place the coals in the top, and then wad a couple of sheets of newspaper in the bottom. Light the paper, and wait for the coals to ignite, then dump them into the grill. Just be sure not to place the chimney starter on any flammable surface.

Make sure your meat is completely thawed before cooking. Thaw it in the refrigerator for a couple of days before you need it, and let it thaw. Remove it from the refrigerator and allow it to come to room temperature before cooking. You can also thaw the meat in the microwave, but it will need to be cooked immediately after you remove it from the microwave.

Avoid foodborne illness, don't place the cooked meat on the same plate that you used to carry the raw meat to the grill. Use a different cutting board for meats and vegetables to avoid cross contamination.

Never use a fork to turn the meat. A fork will poke holes in the meat, allowing the juices to drain away, giving you dry meat, and a difficult buildup of grease and burned on juices to clean out of your grill. Use a pair of tongs to turn the meat, and keep the juices where then belong, inside the meat.

You'll need to open the lid from time to time to turn the meat, and to check for doneness. You want to leave the lid closed as much as possible, though. The changing temperatures from constantly opening and closing the lid will cause the meat to dry out. So, keep the lid closed unless you're turning or checking the meat.

Not everything needs to be cooked over the highest temperature that your grill can attain. If the heat is too high, the outside of the meat will burn, while the insides are barely cooked. Turn the temperature down a bit on the gas grill, or let the coals burn down a bit more on a charcoal grill. There certainly are some foods that need to be cooked on high, but not all.

If you want to brush a sugary barbecue sauce on your meat, wait until the last few minutes of cooking time. If you put the sauce on too soon, the sugar in the sauce will burn.

So, fire up the grill, and practice your grilling techniques. Apply these simple tips, and you'll be grilling like a pro in no time.

I purchased this grill directly from Hasty Bake in Tulsa, OK. The staff is friendly and available to answer questions. I was skeptical about the grill and the performance, but have been very pleased. The ability to raise and lower the firebox is a great feature and I am making the best steaks. I typically steam veggie and cook a steak every Saturday and Sunday, rain or shine. I have thoroughly enjoyed this grill. The only two complaints I have is the paint peeling on the inside and amount of time it takes for the grill to cool down. After about 5 uses, the paint had peeled from the door and the rear of the firebox area. I already see rust forming where the paint is gone. For the price, I did not plan to scrape and repair the grill so soon after the purchase. Maybe should have gone with the all stainless. Second, when I am done and I close all of the vents and lower the firebox, it takes a while for the coals to burn out. Typically, only ash is left. I was hoping when all of the vents were shut, the fire would go out prior to the coals burning out... preserve the coals for the next use. The upside is, it does not take many coals to maintain a consistent heat for extended periods of time. At least I am not wasting too much. Aside for these two things, I am very happy.

Though the shipping box was nearly destroyed during transit, the grill displayed no damage. A few discrepancies exist with the directions and the pictures. A visit to the Char-Griller website will show you a current picture of the grill which will be helpful.

The directions are incorrect in some parts and leaves out information in others:

The instruction states:

"Insert all four corners of the BOTTOM WIRE SHELF in to the four holes located near the bottom inside of the four LEGS. See Fig. C. Next, rotate the LEGS upward until vertical. Important: Make sure the two Long Legs are on the same end."

No bottom wire shelf exists; it's a solid metal shelf. You must also attach and finger tighten four bolts and nuts through the holes at the conclusion of this step.

WARNING....No instruction exists in the Outlaw manual for preparing you to place an external firebox on the Outlaw. If you completely assemble this grill, you will need to partially disassemble much of the grill to remove the cutout for the external firebox!! This cutout proved difficult to remove.

Recommendations on assembly:

Purchase four (4) three-inch bolts and nuts to place through the legs into the bottom shelf. The bolts supplied barely are long enough to catch the nuts.

This grill will weather, so I purchased all stainless steel bolts and nuts to replace the factory cheap bolts. It cost about , but in the event of eventual repairs if the Outlaw needs to be partially disassembled removing the bolts will prove much easier.

One person can assemble this grill, but it won't be a particularly easy assembly if you add the external firebox.

Seasoning the grill:

I "seasoned" the grill as the instructions indicated and let it warm properly and seasoned the grates. It's best to coat the grates with vegetable oil before every use and clean the grates after every use and again coat them with vegetable oil. Coating the grates with vegetable oil after use and while warm causes the grates to "absorb" the oil. Doing this makes the grates function fairly much as non-stick.

Using the Grill:

After seasoning the grill, it works great. It's large enough to keep one area warm and the cooking area much hotter simply by adjusting where you place the food on the grill and the amount of coals you use.

If you place the coals in the middle of the cooking area, you can utilize the sides as the warming area. It comes with a thin metal rack for warming, but I find that thin rack bends under little weight and gets in the way when smoking meat.

The Outlaw works much better and feels substantially better than other charcoal/wood grills I have owned. It's sufficient enough to forgive being placed outside in one area, as long as you cover it. It takes little time to heat coals if you use a chimney.

Good to know:

The grill does have an ability to lose some paint, but any big box store carries paint specially manufactured to repaint effected areas.

Fourth of July BBQ - Spare Ribs Recipe

If you're having a fourth of July barbecue something classy to have that's going to go well with either cold beer or red wine is barbecue spare ribs. The best part about barbecue spare ribs is that they can be the main dish. For a serving of 4 people get about 4 lbs of pork spare ribs (or about three ribs per person). Get chopped coriander for the garnish.

Get the following ingredients for the marinade:


8 and ¾ oz of tomato ketchup

7/8 fl oz of chilli sauce

½ Tbsp cumin powder

4 Tbsp red wine vinegar

7 oz honey

3 1⁄3 fl oz soy sauce

8 garlic cloves , minced

8 ½ fl oz water

1 ¾ oz sugar

Mix all of that together in a medium size saucepan to get the barbecue sauce. Whisk together and bring to a boil. Cook for another minute and remove from the heat. Of course you can also get your favorite barbecue sauce to use as a marinade but where's the fun in that!

Cook Spare Ribs by adding them into a large saucepan and pouring half of the barbecue sauce. Add water to almost cover the ribs and bring it to boil. Then, turn down the heat and cover the lid and simmer for 2 and half hours until the meat is tender. You can check whether the the spare ribs are done or not by inserting a knife into the meat -- if there's little resistance then it's ready. Use a slotted spoon or a tong to remove the ribs from the saucepan into a tray. Let them dry off a bit before they're barbecued.

You can prepare the grill about 30 to 45 minutes before the meat is done. If you're using a charcoal grill, which is the best for that smoky smell and taste, wait until the charcoal is turned white and there are no more flames. It's easier if you're using an electric grill -- light it up and turn it to high and leave it about 20 minutes to heat up.

Dip the spare ribs into the rest of the barbecue sauce and place them on the grill. Cook for about two minutes. Turn the ribs over, brush with more barbecue sauce and cook for 2 more minutes. Repeat the same thing once more and remove the ribs from the grill.

Put the ribs into a serving dish and garnish with coriander. You can have coleslaw on the side. Either corn on the cob or grilled vegetables would be a great accompaniment. Have sweet potatoes or salads as your fourth of July appetizers. Most importantly, have fun and enjoy this fourth of July!

3 Reasons a Portable Gas Grill is Your Most Economical Choice

A portable gas grill means that you can be enjoying a thick, juicy hamburger, a steak, or your favorite chicken barbecue recipe within a few minutes of arriving at your favorite recreation or vacation spot. Charcoal hibachis and small table-top charcoal grills may seem attractively priced at first, but charcoal grills may not be as economical as you think. A bag of charcoal briquettes costs as much as a couple of disposable 1 lb. propane tanks, is more difficult to transport both because of bulk and the potential for dust, and probably will not be used for more than a single outing anyway.

THe cylinders are small, easy to store and cannot create a mess in your trunk like a broken bag of charcoal.

The better portable gas grill models can also be used as your regular home barbecue so maybe it makes more sense to go with a portable big enough for dual home-travel use with the money that you would have spent on a second, purely portable model. The only difference in operation is that when you use the grill at home you will hook it up to a full-size 20 lb. propane tank. The cooking area is as big as almost any regular home model, and the BTU output is also comparable. The only real difference is that you can pack up the portable gas grill and go when the need arises.

I use this grill at least once a week. When I have guests, they leave happy (and full too). Seriously, what I find extraordinary about this product, is the quality. This grill is so well made, you can leave it outside year round, and it will still last 10 years. My guests have told me that my chicken (follow the instructions on how to cook using indirect heat) is the best that they have had anywhere. I'd love to take the credit, but its not me, its the grill. I use the grill for steaks, london broils, chicken, kebabs, vegetables, hamburgers, hot dogs and an occasional roast. If you take 10 minutes to read the accompanying instruction/cook book, all of these foods and more will come out perfect every time.

I have been a Weber charcoal grill owner and avid user for decades. My old 22.5 inch Weber charcoal grill suffered from bent aluminum vents and a lot of weathering, so I decided to get myself my birthday present early and bought a 22.5 inch Weber charcoal One-Touch Gold yesterday. I looked forward all day to using it to prepare tonight's dinner. I noted that it had the plastic handles like my recently-purchased Weber chimney (which I knew to get hot), but did not appreciate how *very* hot they would get on the grill. The first time I lifted the lid, I learned this and so took a potholder out for the next time I checked my food. But, me being used to the wooden handle of my old grill being manageable, I forgot to use the potholder. The the heat from handle nearly took fingerprints off of my hand and I dropped the lid, denting it on one side and bending the lid vent handle.

After we enjoyed dinner, I went online and registered the purchase at the Weber website. I then called Weber support about the issues with the hot handle.

First positive observation: they must have a great I.T. group and system, because they knew me and my grill after a few quick questions only minutes after I had registered it.

Second positive: the support gentleman acknowledged that they had made this change to the materials some years ago, and could offer no real solution like an asbestos handle (I kid...sort of). So they are sending me a new lid to replace the dented one and some complementary oven mitts to use when handling the grill.

Color me impressed, confirming the observations of others here about Weber support and commitment to quality service. If their engineering department could correct the offending problem, I might become a major stockholder! As it is now, if I can retrain myself to always use the potholder, I hope to use this grill for years to come.

Fun At The Whistle-Stop Barbecue Festival!

This year's Whistle-Stop Barbeque Festival was great fun. I love great barbeque and the many different grills and smokers on parade almost made me want to buy one and hit the barbeque circuit. Some were painted black, some all stainless steel and there was one that looked like a big egg on wheels that was painted blue.

One thing all these fantastic grills had in common was that the cooks all used either wood or charcoal to cook their meat! None of the sissy electric grills or gas grills was allowed at this competition. These were real men and women who toured the country with their meat cookers hooked behind their trucks. I'll bet their ancestors worked the cattle drives on the old Chisholm Trail out west and cooked their meals on a campfire built out of old buffalo chips.

I had visions of entering one cook-off after another until I discovered how much those steel monsters cost! Most of these started as low as $5,000 and went up from there! Way Up! That doesn't take into consideration the vehicles it takes to haul one of these grills around the country; color coordinated and everything!

Grills of all size and description lined the spur line of N & L Railroad tracks in downtown Huntsville, Alabama. This area is now designated as a historic site and was host to some of the most beautiful barbeque grills in creation. I was almost salivating from the sight of all the unusual grills and smokers, not mention the wonderful aromas of the four categories being judged, barbequed ribs, chickens, pork and beef brisket, that were sizzling in their own juices.

There were competitors from Texas, Tennessee, California and North Carolina, in addition to eleven other states. These were folks who follow the barbeque tour, piling up points to be considered for the national title later in the year.

For back yard grillers like myself, there was a "backyard" division made up of amateurs who just love to cook meat in the open air. I didn't enter this year because even at the non-professional level, it takes a lot of preparation to be ready for this event and by nature I'm a lazy man, not given to anything that appears to be too much like work.

Since most of these professional barbeque chefs came from other states, they had the "big rigs" of barbequing. There was one that was so beautiful it almost made tears come to your eyes.

There before me was a huge 12 foot long black grill shaped like a propane tank, resting on a black steel meshed bed attached to a dual axel trailer that had chrome fender wells. There were dual chrome pipes possibly stolen from a Peterbilt or Mack truck that graced either side of the grill itself. It was a wonderful sight to see clouds of hickory smoke boiling out of these four smokestacks as its truck driver owner fired up the logs in the pit.

All gauges, handles and trim work were of polished chrome, matching the smokestacks and wheel wells of the trailer, which perfectly matched the large black, dual wheel pickup truck that hauled it to various competitions around the country. The glittering chrome on ever accessory is what really sold me on this rig.

All around me were elaborate barbeque grills and smokers which had to have cost their owners a bundle of money. One toy that caught my eye was an actual log cabin built on a trailer with a grill on the end of the porch. The cabin itself was a concession stand where they sold barbeque condiments. Practically every contestant had their own spices to make their sauces or barbeque rubs, making each booth a little more special than the last.

Some of the barbeque rigs had sponsors for their roaming barbecue cookers displayed in banners overhead or even painted on the truck and trailer. There were familiar logos of some of the most well known outdoor companies, selling ever thing from charcoal to camping equipment.

By the end of the day I had seen enough to know that I'll probably not be joining those barbeque geniuses on the road to the next competition. I left the cook-off smelling of barbeque smoking and with a tummy full of satisfaction.
